Copernicus Institute of Sustainable Development, Utrecht University. She holds a PhD in Epidemiology and focuses on the relationship between food environments, dietary behaviors, and chronic
disease risk. Her current research emphasizes the health and sustainability impacts of ultra-processed foods, including the use of AI to automate their classification. Dr. Pinho's work integrates
nutritional science, human health, and sustainability, aiming to support the transition toward healthier, more sustainable food systems. She has also contributed to major projects like EXPANSE
